Glut of Courgettes - delicious recipe

Here is a lovely recipe for Courgette Lasagne I found on www.bbcgoodfood.com/recipes/4716/creamy-courgette-lasagne . I used Lloyd Grossman Tomato & Mascarpone with Vodka jar of sauce and lasagne sheets you don't need to pre-cook. I drained the courgettes as mine were going on marrow size and it was absolutely delicious. I am going to try the courgette chutney recipe on the same website as well.

  • Thanks for this, I am getting a bit fed up with courgette soup although it is very nice. This will make a nice change. Now for the mass of squashes emerging, well that is another matter although I suppose I could use them in this receipe.

    Thank you so much , been wondering what to do with my marrowesque courgettes, trying this tonight.

    Would anybody be able to give me a tasty recipe for the jar of pasta tomato sauce that is says you need to use too as I have a glut of tomatoes now too :)

    I made this cake with my glut of courgettes. I put a handful of chopped up pecans in it too. At first I want sure about the taste but it was better the 2nd and 3rd days when it had set a bit more. You can't taste the courgette it just gives it a nice moist consistency!

  • I've made that one as well Rotwein but put in 100g of chopped dark chocolate. Found it's worth "drying" your grated courgette between sheets of paper towel to reduce water if they are large ones.

    Courgette chutney is nice as well- lots of recipes out there if you google.

    They all sound nice! Another nice one which is brilliant for when they get too big is Lamb & Marrow bake (or it might be called 'pie' instead of 'bake') which is made with lamb mince & is actually a Weightwatchers recipe, though you'd never know it.

    Remember....if you have to put it on a credit card, extend your overdraft or take out a loan to buy whatever it is, you probably can't afford it, as that's not your money, it's somebody else's!

    I must admit, I have also recently fried batches of onion and courgette off to freeze ready to add to fried off mince, garlic and tomatoes for bolognaise over winter!

    Hey everyone, try this recipe - made this as a side to accompany stuffed chicken, I included chilli's with their seeds because I like the heat, and the cheese I had in the fridge was one with small chilli bits in - really recommend it, I wasn't sure at first but it tasted amazing as a side!!

    i have made the following cakes......

    courgette
    courgette & lemon
    courgette and walnut
    courgette and raisin
    courgette and raisin iced
    courgtte and walnut iced
    courgette lemon and raisin

    aswell as all the savoury dishes, have got an amundance at the plot - yellow, tri star, trombone, green, marrows and loads of difference squashes and pumpkins!
