Green Bean glut

I know I should be really pleased my OH brings so many green beans home from the lottie - but they're rapidly turning into a massive surplus! He loves growing them (!), but we're not gluttons for them really - iykwim! :o

Other than blanching & freezing them, is there anything I can do with them so I can keep them to help us out over the winter?

I had so many last year I was sick of the sight of them, & in the end threw some out/composted etc - even my friends & neighbours didn't want any more! :rotfl:

  • hi, ive got a similiar problem of too many beans so im going to have a go a chutney, maybe you could make some chutney too?

    Green Bean chutney is lovely - especially the W.I. recipe. I only wish I had a load of beans :(.

    I've been inundated with green beans as well as runner beans and somebody on another thread suggested eating the runners with warm brie (or camembert) and sliced ham. Tried it and it is very diffferent and delicious. A meal on it's own. I bet the green beans would taste just as nice.

    Last year I made St Delia's Spiced pickled runner beans, bet it would work with green French beans as well

    It was lovely BTW, but next time I will slice beans a bit smaller, I had them chunky size

    thanks so much for this I have a similar recipe for cumberland bean pickle but its not coming out dayglo yellow enough lol sure it has a misprint regards to turmeric amount and this one looks more like it :T

    Still got a load of Chutney left from last year, so it won't be that!

    I'm very taken with the baked Brie/Camembert recipe, num num num - and may even give the 'Famous Campbells Soup' recipe a go too - I remember making that when I was working in the USA 30 odd years ago & it was delicious!

    Pity you can't 'cake' with them like courgettes / beetroot / parsnip / carrot etc!

    One of the only ways my Mum could get us to eat green beans when we were little is by grating cheddar on them so that it all melted over the beans - they are yummy this way.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    Yes. I posted this on another thread. In fact, apparently the original recipe was for green beans not runner. (I got it from my sister who saw the tv program and remembered it when I was moaning about wanting something different to do with runner beans - she hadn't been paying much attention - just remembered beans). I tracked it down later but have forgotten which chef it was.
  • mmmm I found a lovely green bean recipe in the Silver Spoon cookbook. Basically, lightly cook your beans, then in a separate pan melt a little butter and add spring onions/whole garlic clove (it is just for flavour). Then mix the beans with the warmed butter, sprinkle with sesame seeds and add some extra virgin olive oil. So tasty it has made me develop a fancy for green beans at last!
