Need to change internal layout in flat

DS has just bought a small flat in Leeds, but the internal layout is not workable, which is probably why it was up for sale for quite a while.
We want to open up the lounge/kitchen to create an open plan room with hopefully a new Ikea kitchen, this would involve knocking down 2 kitchen walls which are non supporting.
The flat has 3 bedrooms, 2 of which are odd shapes so we would like to convert these into 1 bedroom and try and squeeze in an ensuite shower.
We have had a quote from a builder, who was essentially subcontrating the work, for over 20k excluding the kitchen/bathroom units etc. which seemed expensive.
I don't think we actually need a fully fledged builder, we just need a couple of walls knocking down, a couple of new ones erecting/ plastered, a door moved and the kitchen/ensuite installed.
Which tradesman should we use to get the structural work done, someone suggested that a joiner but I'm not sure

Also check with the local building regs people as some of what you are planning may need approval. If it is a leashold flat, do you need approval of the freeholder. Reducing the number of bedrooms will reduce the value of the property.
You'll not a get a sensible answer on here, the scope of your question is just too broad, a builder has been in and quoted £20K, that says one of two things to me.
1/ It's a pain in the backside and He doesn't want the work
2/ The work required is far more extensive than you comprehend.
£20K buys you an awful lot of building work excluding kitchen/bathroom fixtures and fittings0
