Help my bland curry please?

Hey all

I made a curry tonight and to be honest it's kinda bland and not interesting to eat :( I have 2 more portions left over so was wondering if there is anything I can do to improve the taste. i followed a recipe from a magazine but added some extra veg. It was chickpea and spinach curry.

I fried an onion and garlic glove, added 2-3 tbsn garam masala spice and fried for few mins. Then added potato and cauli (these are the extra ingredients), passata, tinned chickpeas and then simmered for 10mins. Then added the spinach.

So any suggestions? Or is it ruined?

    I havent made that myself, but usually if the curry tastes a bit bland I add a bit of garam masala, worcester sauce or if the recipe called for water instead of stock, a stock cube. I also like to add some chutney (either a sweet or savoury one depending on how sweet or savoury I want my curry).

    Hiya,

    I make a chick-pea curry abit like that, (I got it from the free Asda magazine)

    The receipe I use calls for lemon juice as well, two tblspoons, the previous poster said about a stock cube, maybe make one up but much less water, just enough to wet your mixture and mix this in.

    You could try a pinch of cayenne pepper :)

    Or sometimes an extra pinch of salt helps mine taste a bit better
  • Cumin, coriander and a pinch of chilli always works for me!

    I have lemon juice in so will try that first. then the stock cube. I don't have any cumin or ginger - they are on my shopping list for next time though.

    It'll be ok to eat when I'm starving and have nothing else in!

    I batch cooked an aloo gobi the other day to use up all my veg from my lottie. The main base of it is potatoes and cauli. If the recipe only asked for garam masala it's going to be a bit bland IMO. If it was me I'd fry up some fenugreek seeds, mustard seeds (yellow or black) ground coriander, cumin powder, turmeric and some fresh/powdered chilli in a little oil. You could use any combination of these spices depending on what you have in your store cupboard.

    When the mustard and fenugreek start to 'pop' (really important because the natural oils are released then) add some chopped garlic, fry for a couple of mins then stir into what you have left and cook through for maybe 10 more minutes. Oh some ginger ground/fresh would be a nice addition too. Sorry it's slightly vague but I add by eye...I'm guessing probably about a tsp of each, apart from turmeric which is probably 1/2 a tsp and chilli to taste.

    Edited to add: I'd add half the amounts based on the portions you have left. I probably use those quantities for 4 portions.

    Hi
    I guess you added extra veg but didn't adjust the salt and other spices to cover it. In a pan heat a tbs oil and add ginger, garlic, salt and little of other dry spices as per your original receipe, stir fry for a minute or two and mix it with your curry.

  • The recipe I use uses ginger, chilli, cumin coriander and garam masala. I don't think the garam masala would be powerful enough to give a decent flavour by itself.
