lid on or off?

My friend always cooks vegs, rice, eggs etc with no lid on saucepan, she says her mother never used a lid (she was an excellent cook)
I maintain one should always cover utensil

    Heat travels up, if you don't put the lid on then you have to provide more heat at the bottom to compensate for the heat escaping from the top.

    depends how quick you want it to cook or how much power you wanna use lid on less cooking time therefore cheaper
  • I cook with the lid off. it's just a pain when it's on as it just tends to make the water bubble over and make a mess of my cooker!

    i thought u used less power if u put the lid on....i suppose the lid keeps the heat in
    onwards and upwards

  • You should def. cook rice with a lid on, as the rice absorbs the water/steam.

    Veg will cook quicker with a lid (and its more economical, energy wise) but its not essential. That's if you're boiling it. If you are steaming, you should have the lid on.

    Pasta, for some reason cooks better without a lid - I find it goes soggy if I cover it. (But sometimes pop a lid on until it is boiling, then remove it).

    Yes as fiscal says above - pasta should be cooked without a lid. Rice with.

    I use a lid when cooking veg but once any green veg has reached the boil I take the lid off as keeping it on can make it lose its colour.

    I often tend to cook the stuff that makes a horrible mess when it boils over without a lid, but have noticed that all the books on green living/energy saving recommend cooking with a lid as it takes less energy so as I've been working hard over the last year at getting our monthly energy bill repayments down, I use a lid whenever I can.
    2026's challenges: 1) To rebuild our Emergency Fund to at least £5k.
    2) To read 50 books (12/50) 3) The Re-Shrinking of Foxgloves 8.1kg/30kg
    Remember....if you have to put it on a credit card, extend your overdraft or take out a loan to buy whatever it is, you probably can't afford it, as that's not your money, it's somebody else's!
  • Using a lid more often also cuts down steam in the room, helping keep damp and mould at bay.
