Herb ideas?

I'm a bit of garden newbie but dreaming of having a herb garden.
I've set it up outside in pots and troughs.
I've tried corainder a few times now to no avail it either dies or shoots up into flowers so should I try inside now?
Other than that I have growing well: sage, thyme, chives, tarragon, rosemary, oregano and a scotch bonnet pepper.
I had mint but it took over the trough so thinking of maybe trying it in a pot in its own?
Any others that would do well outside?

Mint definitely needs to be in a pot of its own otherwise it will take over! Parsley is pretty much the same, mine is taking over the pot where I have grown rosemary, tarragon, majoram and chives, think I'm going to have to cut it back a bit!

Coriander does have a tendency to bolt - I keep picking and freezing it to keep it going a bit longer, but if you keep sowing at intervals of a few weeks then you'll always have some on the go. It'll go to seed eventually, wherever you keep it. It's not like mint which keeps going forever.
You could also try lemon thyme or lemon balm which is good to use in cooking, and I find basil does quite well in pots if you can keep it from getting munched.All shall be well, and all shall be well, and all manner of things shall be well.

Corriander has a tap root and needs to be in a deep pot of you do this it wont bolt as quickly

I think you can eat the flowers, and yes the seeds can be used in cooking.

I bought the Aldi herb selection plants when they were selling them, maybe a month or so ago. I planted them altogether in a trough and they are all thriving - thyme, parsley, oregano and mint - the only one I was worried about was the basil as that was under attack all the time! Typical as basil is my favourite herb and the one I use most! First the slugs (now disposed of) and then what I discovered was flea beatle (thanks to a poster on here) now that problem has been sorted too and my herb garden is thriving! can i ask you how you freeze youre herbs iv wanted to do this but always find they go soggy after i de-frost them i would be greatful for any tips you have

I just put them in a container in the freezer. Yes they do go soggy, but they taste the same and as I'm only chopping them up to use in cooking, not as a garnish, the sogginess doesn't matter. I chop them while they're still frozen which is easier to do.All shall be well, and all shall be well, and all manner of things shall be well.

that's really interesting about the coriander root. I have been having small pots on the go int he kitchen but kept forgetting to water them, so I have put a bigger pot outside to catch the rain (not that we've had much) and so far they are going much better. Perhaps it is more due to the depth. I think with coriander you have to grow a slightly thick skin and be happy to chuck the plants on the compost heap when they start going feathery! Its just remembering to sow more seeds in time that gets me!0
