Help with dinner tonight anyone?

Ok heres what I have in my house, I am on a diet and need some ideas asap as im lost!

Beef mince
Stewing steak
Prawns (frozen)
Salmon fillet (frozen)

1/2 red onion, garlic, mushrooms, green beans, cucumber, ginger, lettuce, carrots, tomato (tinned and fresh) sweetcorn, eggs, potato, spring onions, red pepper.

I have rice, spaghetti, pasta, bread baked beans and all the usual spices and other ingreditents found lurking at back of peoples cupboards!

This has to be low fat but tasty, I know lots of you are great putting recipes together from random food in the fridge!:rotfl:

    Spaghetti Bolonese? You have mince, garlic, mushroom, onion and tinned tomato.

    How about a prawn stirfry? Prawns, onions, mushrooms, garlic, ginger, carrot batons, spring onions, pepper strips, splash of soy sauce and serve over rice?

    Rice salad with poached salmon? Cook your rice, add chopped fresh tomatoes, spring onion, diced cucumber and peppers?

    Do you have any lemon.......Put the salmon onto a large piece of foil, grate on some of the ginger and squeeze over some lemon juice, salt and pepper. Make a parcel of the salmon and bake in the oven for 20 minutes........serve it with either salad or steamed spuds, green beans and carrots.

    Frittata?
    Lightly cook a chopped onion, the red pepper, chopped skinned/deseeded tomato ... add 2 lightly beaten eggs (add a tbsp of skimmed milk to the eggs) cook until almost set, then whack under a hot grill to finish off the top.
    Serve with a green salad using lettuce, spring onions, diced cucumber.

    I'd do a stir fry too, or just some marinated salmon on a bed of rice with some veg. Both those could be low fat meals. I'm loosing weight at the moment and keeping clear of mince as it is quite calorific compared to other things.
  • MEatloaf, spaghetti bolognaise, meatballs tomato sauce and pasta, chilli, burgers, mince and tatties. The there is beef carbonnade or beef bouginone if you have wine or beer. Mince is fine on a low cal diet as long as it is extra lean and you have 100g

    I quite like prawn kedgeree - boiled egg, prawns, rice, finely chopped spring onion & dash of curry powder (if you have it).
    You could slice up your red pepper too so you have two portions of veggie with that meal.

    Or a prawn curry? Low-fat if you use a tomato-based one.
