Challenge? Lunch (& dinner if poss) meals for those watching that weight...

Options
I erm... went on an activity holiday. It was quite nice, but I ate far too many meals out and blew my budget not so much out of the water, but into space.

Add to that I jumped onto one of those spangly weight-!!!-height-and-fat measuring machines and I'm looking at about 12% of my body weight being fat (not abnormal) and just sitting pretty on a BMI of 25 (on the verge of being 'overweight')

I could do with loosing about 3.5lb's to trim me down a bit = )

Unfortunately I'm a very, very, VERY busy person, so the quicker the preparation the better. I don't eat mayo or dressings (so no worries there). I've made some homemade soup a while back to take into work but I've not made the effort to make anything since. Any ideas? Sandwiches are ideal but I like meats etc esp. marinaded.

So something exciting, cheap, low fat and quick. Yeah... that's a challenge = )

    Plain chicken breast / legs and salad.

    You don't have to do anything fancy with the chicken, just wrap in foil and bung in oven. Peel of skin after cooked if you want.

    Not very exciting but not much preparation involved and pretty cheap, makes lots of meals fromthe various salad bits you buy.

    Tinned mixed beans for the next meal as well.

    Salmon fillets - marinade in 2tbsp soy sauce and a tsp brown sugar. Takes around 5mins/side on a griddle or under the grill.

    Or make up a whole load of roasted veggies and some meat when you have time. Chuck together with some pasta and stick it in a pot for lunches.

    that sounds yum. Have two that were reduced that are for tea tonight so that just makes them sound even better!!! ;)

    Stirfry some lean meat or just crisp fresh veg in a bit of sesame oil with some ginger and soy sauce. You could egg fry some rice for with as well if you are allowing yourself eggs. You dont need much oil at all really the key is to fry very briskly

    Same here - I only buy fish now if we can get it reduced, in Lidl, or on an R+R :rotfl:

    I buy the Tesco packs of stirfry veg - Just empty into a wok that has a small spray of oil in the bottom. Add soy sauce (or jar of sharwoods stiry fry sauce if that fits with the diet). Stirfry for 5 mins then eat. Yum.

    Seriously quick and easy tea!

    Also add white fish pieces, or prawns or anything else on offer! ;)

    been trying to find an oil sprayer since our old one is becoming a bit decrepid. Any cheapies about?

    Todays lunch was a bit naughty but not as bad as it could have been. Precooked chicken pieces from tesco with value cherry tomatos (22p!) and salad (99p). Total cost was about £2.97 but compared to the sandwich I buy from the shop @ £3.40 I'm getting more bang for my buck!

  • homemade pasta salad with grilled chicken or tuna? then you can make a couple of days worth and keep it in the fridge.

  • If I dont eat bread, pasta or tatteys for a week I can lose half a stone :rolleyes:
    Cut down on carbs if you eat loads and see if it makes a difference :)

    Just one of those plant spray bottles will do, you can get packs of three in my local poundshop :)
