Flat Leaf Parsley

I have lots of Parsley which is ready to cut now but I don't have a use for it at the moment. Can I hang it up to dry or freeze it? Also it has lots of what look like white/grey aphids on the stems down by the soil, would anyone know what they are and how to get rid of them organically?
