I wouldn't defrost in the micro - too many "hotspots" to be safe. Fill the sink with cold water as has been said previously - but clean thoroughly afterwards, you don't want any nasty germs lurking next time you wash up.

If you can defrost it a little and then portion it into legs, wings etc it is safe to cook from frozen because the heat can circulate around it all. I was actually told this by the trainer on a recent food hygiene course. Apparently it is safer than defrosting because the bacteria don't have time to multiply before been cooked. I have tried it several times and have always been fine.

Sorry, I live in a big old house, and when I said warmish water I meant room temperature, not the freezing cold strip your skin off stuff that comes out of our taps....

Personally I'd let it defrost properly and use the motorhome gas to cook it. salmonella poisoning just ain't pretty!

I don't know if you have done anything with it, but I frequently only get a chance to partially defrost the chicken. Provided the chicken is cooked through (ie the juice run clear when you stab them under their armpit), I would say it was fine to use - I have always used this process, my Mother used it, and no one has ever got poorly from anything we have cooked!

The key is to ensure a chicken is thoroughly cooked. I would say introducing water into a chicken carcass is inviting further bacteria in. As long as the chicken is cooked through and piping hot - it should be fine.

I am sure someone will protest, but as I say, we haven't ever suffered - ever!
:D Thanks to MSE, I am mortgage free!:D

Whilst I would echo all that has been said in defrosting carefully, I do have a tale to tell! Went out one Sunday afternoon and realised I had forgotten to put chicken in oven. Phoned 15 year old and asked him to put it in with careful instructions. Got home 3 hours later and was mildly surprised that chicken was not cooked. (Expected it to be overdone!) Never mind, cooked potatoes and veg and eventually chicken ok. Went to lay table for dinner, opened fridge door and lo and behold - one chicken. So I quizzed my son and he told me quite blankly that he had got the chicken out if the freezer and followed my instructions. He had cooked it from frozen! I was then in a quandry - do I eat and risk food poisoning or throw away and start again? (It was 7 pm by then). We risked it and suffered no ill effects. But my son now knows never to cook from frozen!

  • I was wondering why it is ok to cook meat from frozen that you buy in the supermarket i.e. lamb shoulder - it says best cooked from frozen. Whereas other meat that I freeze myself has to be defrost thoroughly? Do they do something special to it? Just curious and I'm sure someone has an answer for me. Thanks.

Can't answer you question Thriftychick except to say I would ignore it and let it defrost before cooking.

That's one of the many reasons I like to buy from a butcher or a farmshop -I hate bossy labels.
