Hi all,
hopefully someone can help me...i have just made a banana loaf/bread but when cutting it, there are some bits near the banana pieces that are light pink in colour....has anyone else had this???? it tastes lovely, although a bit stodgy!!
any ideas would be much appreciated

What other ingredients are there in the loaf? I say this as I often use sunflower seeds in banana loaf and they can go an alarming (although harmless) shade of green! Perhaps something in it reacts with something else?Let's get ready to bumble! :rotfl:0

Can't help I'm afraid, other then to say that I've experienced that too. It also happens whenever I've put bananas into a crumble type thing. Don't know why, but I've not come to any harm, so I keep on scoffing.

Hehe I've had this happen in carrot cake! OH was not impressed and accused me of trying to poison him :rotfl:
To the OP, I've had bits of banana turn slightly pinkish in banana bread before. If it tastes good then eat it0 -

It's to do with the potassium in the bananas. The sugar in the fruits reacts with the potassium when you apply heat, sometimes you get pink bits, other times if loads of sugar (riper fruit) you can get the bits to go purple. Absolutely harmless and safe to eat.
I knew all those years of working in a chemistry department would come in handy at some point!0
