    Lots of lovely idas here.

    My fav comfort meal on the hospital menu (i'm in quite a lot with copd) is sausage ba\ked beans & chips

    SAUSAGE CASSEROLE

    Have you read the ingredients list on a packet of sausage casserole sauce mix?

    Serves 2

    INGREDIENTS

    2 carrots
    2 potatoes
    ½ an onion
    1 tablespoon of oil
    4 sausages
    200g (½ a 400g tin) of plum tomatoes
    1 teaspoon of parsley
    1 beef stock cube
    250ml of water
    Ground pepper to taste

    METHOD

    Peel the carrots and cut them into slices. Peel the potatoes and chop them into 2 cm (1 inch) pieces. Peel the onion, cut it in half, chop one half into tiny pieces and save the other half.

    Put the oil in a frying pan on a medium heat. Add the sausages and onion, and fry for about 5 minutes until the sausages are thoroughly cooked. Stir frequently to stop it sticking.

    Open the tin of tomatoes. Put the juice into a bowl. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Use half and save the other half.

    Put the sausages and onion, carrots, parsley, potatoes, stock cube, tomatoes and water into a large ovenproof dish with a lid. Stir thoroughly. Put the lid on the dish.

    Cook in a preheated oven at 150°C, 300°F, gas mark 2 for about 2 hours. Check the liquid level from time to time and top it up if it starts to dry out.

    Season with the pepper.

    ADDITIONS & ALTERATIONS

    Use mixed herbs instead of the parsley.

    Serve with a green vegetable, or add 100g of peas 15 minutes before the end of cooking.

    TIPS

    Use good quality sausages. The more meat in them the better. There are few tastier foods in the world than a meaty, herby British sausage. There is nothing worse than a bland, mass-produced tube of pink stodge.

    Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.
    The acquisition of wealth is no longer the driving force in my life. :)
  • When I go away and leave DS to fend for himself for a few days I just make sure there are sausages, beans, bacon, tomatoes (fresh & tinned), eggs, cheese, bread, crumpets and milk. Any prepared meals I`ve left in freezer don`t get used, as he`s after a `quick fix`...with no defrosting, minimum heating/cooking time. He`ll wait till he`s gone past `peckish` and thinks he`s about to STARVE, then eat the beans, cold from the tin, while frying eggs or sausage or bacon for a quick butty, or putting a bit of cheese on bread or crumpets under the grill. Or mixing grated cheese and a tin of tomatoes to put on toast or noodles, or slicing fresh toms onto cheese on toast. Whatever I`ve left prepared doesn`t get used. It`s his version of `survival` cooking that kicks in!
  • Well - I now have a lovely steaming mass of sausage curry and spicy casserole and a mound of rice and mash potatoes. All in the freezer for him.

    I know that he can fend for himself - its just in this brave new world of not spending a fortune on food I'm pretty sure that he would:
    a) Lament the lack of usual luxuries in the kitchen
    and
    b) Figure that take away doesn't count as grocery money!!

    I'm actually very proud of myself - and slowly realising the truth in what grandma used to say - a good cook is someone who can take cheap ingredients and turn them into a feast, not someone who can take the best of everything and turn it into restaurant copy!

    Beware very fattening!!!!!!!!!:eek:

    I do sausages roasted in oven, meat for OH, Linda McCartney for me. Then I do roast potatoes which OH then mashes up on his plate with lashings of gravy for lovely crispy mash potato. Serve with peas.

    Lovely comfort food but not the diet option:rotfl:
    There is no issue so small that it can't be blown out of proportion
