Do potatoes improve with storage/
We dug up some potatoes last Saturday and had them with tea. They were nice, but very floury. We had some more for tea last night and they were completely different, nice and creamy and really tasty. I could have eaten a plate of potatoes on their own. So my question is do they really improve with age? Maybe the starch turning to sugar or something scientific like that?....like i know what I'm talking about:D
