Gluts
Hi
Just wondered how everyone is using up or keeping their gluts for future use?
I have gluts of courgettes, carrots and tomatoes. We are eating as many as we can so I am now trying to thing of ways to keep them for future use.
Not sure if i can freeze carrots as they are or whether they need blanching? Not really sure what the purpose of blanching is!

Make tomato soup and freeze it, carrots should store quite well.Norn Iron Club member No 3530

Hiya,
I have just put together a compilation of courgette recipes for my allotment site. You can download it here.
You can make batches of tomato sauce and freeze in bags to add to bolognaise or other dishes later. I also batch griddle slices of courgette and open freeze. These can be added frozen into bolognaise or lasagne (they will go soggy so are best used in sauce dishes like this).

Toms can just be frozen whole, OK, they will be mushy when defrosted, but use as tinnned ones for soups / stews etc
Carrots should be OK in ground for a while yetWhen an eel bites your bum, that's a Moray0
