  • Haven't tried this myself so don't know if it's ok.

    125g/4oz butter
    125g/4oz soft light brown sugar
    50g/2oz golden syrup
    75g/3oz black treacle
    175g/6oz plain flour
    1 tsp ground ginger
    1 tsp ground cinnamon
150ml/5 fl oz warmed semi skimmed milk
    1 tsp bicarbonate of soda
    1 med. egg beaten
1 1/2 tbsp chopped glace ginger

Put butter, sugar, syrup & treacle into a pan and heat gently until butter has melted and sugar dissolved. Do not boil. Pour into breadmaker and add flour and spices. Stir the bicarb into the warm milk and add this to the mix together with the beaten egg and ginger. put bucket into breadmaker and set to cake programme. After 5 mins of the mixing cycle, scrape down the sides of the bucket with a plastic spatula to ensure all the ingredients are evenly mixed. When cooked remove bucket from machine and leave 5-10 mins before turning out.

This is the recipe in my Panasonic breadmaker book. Slight variation on the above.

    1oz (25g) demerara sugar
    3oz (75g butter
    2oz (50g) golden syrup
    3oz (75g) black treacle
    8oz (225g) plain flour
    1½ tsp (8ml) ground ginger
    1½ tsp (8ml) baking powder
½ tsp (3ml) bicarbonate of soda
    ½ tsp (3ml) salt
    ¼ pint (150ml) milk
    1 medium egg, beaten

Put sugar, butter, golden syrup and treacle in a pan and heat gently until just melted. Stir in the flour, ginger, baking powder, bicarb and salt and then beat in the egg and milk.

Remove the mixing blade from the BM and line the bucket with greaseproof paper. Put the mixture inside this making sure it stays inside the paper. Select the bake only programme and put 35 minutes on the timer.

When cooked test with a skewer and if it needs more cooking select the bake only programme again and put an extra 3-5 minutes. Let it stand for 5-10 minutes before taking out of the bucket and leaving to cool.

Yum, I love ginger cake and have been waiting to try this myself! :D
