Veggies for the slow cooker : need inspriation please

Hi everyone:j
I am increasingley usign my slow cooker these days, far more than when I was at work even:eek::D.
I am quite good at bulking out meals with pulses & veggies but I find I rely lots on carrotts, onions, mushrooms & spuds in the SC. Anyone offer any inspriation on what else is in season, cheap & might work well?
I don't need recipies thanks (until one of you mentions something particaully yummy:D), just some veggie inspriation!:rolleyes:
I tend to cook a lot of sausage casserol, chicken chasseur, beef burginion (sp?), morrocan lamb casserol, the beef is the only one I don't add pulses too (it's a yummy Delia recipe & would spoil it!) and I add carrotts, onions & mushrooms to them all, spuds if I feel like a hotpot, peppers to the lamb, sweed & parsnip for variation. What other options are there?

Hi I'm veggie, but in terms of what you could add to meat dishes in the sc - how about sliced leeks, very small whole onions (or shallots), chopped butternut squash or sweet potato?
Yesterday I had a delicious vegetable soup from my sc - just bunged in chopped carrots, leeks, onions, swede and celeriac, garlic, herbs, stock, cooked overnight and blended till smooth the next day. Cheap, yummy and enough to take for lunch tomorrow.

Thanks Sazbo, Butternut Squash is a good idea, I already use shallotts sometimes & a few leaks although Hubby is not keen on them
. I find sweet potato tends to disintergrate to mush, must be the way I look at it or something:rotfl:
Any other ideas anyone?
