Shop bought roast potatoes...at home!

This is something I've done at Christmas for the last few years (as we go out to friends for drinks on Xmas morning) and suddenly thought ' why not all the time?'

You can buy potatoes in a tin foil dish at Sainsburys part roasted (and they cost a fortune) so I now d the same...part boil as many potatoes as you have/can and then put into hot oil in oven (I only use olive oil) as per usual; then after about 30 mins take out the extras and put them into your own tin foil dishes. Cool and then refrigerate (I have also done this from frozen now)
When yo want roast potatoes they now only take about 30-40 mins from 'GO' so you can have roast potatoes mid-week for no hassle!

At christmas I prepare them the night before (along with brussels - lightly fried after boiling in butter and chopped pancetta- and carrots dampened with orange juice- both in foil dishes and then in oven to heat through) It started one year when I really wanted to buy everything ready from M&S but it was sooooexpensive so I did it myself. I just don't know why I never thought of pre-preparing potatoes for the rest of the year!!!

  • I also put some of the beef roast or other meat into gravy and freeze that, do a few more extra yorkshires and freeze them, never really thought of doing it with the roast potatoes - we've got a nice dinner between us! I do it so it saves time if i'm going to be out or shopping or something, if I know thats deforsting in the fridge ready to cook when i get home it stops the temptation of a takeaway!

  • I bar boil and freeze on a tray then bag up potatoes and they take 30 mins from putting into the oven.
  • I normally par boil and then freeze parsnips cos they taste better once they have been frozen. We like roasted parsnips so much that we want to eat them before the weather is cold enough to frost them (like this weekend) so this was a way round the problem.

    This is truly one of those 'now why didn't I think of that before...?' ideas.

    My mother will be horrified that she no longer has an excuse to buy them readymade. :D
