Grated carrot

Hi all,
I've searched through all the threads but cannot find a definitive answer on this - does anyone freeze grated carrot?
I've got quite a few sitting in my fridge past their best, and it would be handy if I could freeze them grated just to bung in stuff from frozen for bulking out purposes. (I know I could chop them and freeze, but that's not what I want to do) Anyone had any success with this or is it a no go?

Yep, you can. A few people on here make a mix of chopped onion, carrot, celery etc to freeze and then bung in a handful to soup/mince etc.0

Yep I do, did a big bag yesterday actually. It can form a bit of a big frozen lump, but just takes a bit of bashing before using!Little lady arrived 13/12/110

Didn't know that. Is it good enough to eat fresh or best just for cooking after having been frozen?0

It normally goes soggy when defrosted so I find it's only really any good for cooking.
I also freeze grated courgettes for bulking out mince dishes and find both carrots and courgettes are better after being frozen and defrosted, as it gets rid of a lot of the excess moisture and you end up adding bulk to the dish without watering it down too much.0 -

Not sure it's the exact post I am looking for, no doubt Mrs T will locate the more specific one but she explains it here in this thread
there may be previous discussion in the oodles of carrots thread.

If you open freeze it (I use icecream lids) it is less lumpy. In fact, most things I open freeze so I don't have to deal with lumps.0
