New to renting..A little help please!

Hello All,
I'm not sure if this is the correct forum to be posting on but everyone seems so knowledgeable and helpful it's worth a shot.
We will be moving out of student rental accommodation into a 'normal'house soon. We are looking to be in a new house by Aug 31st.
We have viewed two houses but both were unsuitable, the first house was mainly to look at the area, but the second one was just :eek:! They sent out an extremely unhelpful estate agent, he couldn't answer any of our questions and all he seemed to be able to say was "ummm..". So now here I am..
We were told that to move at the end of August to start looking properly 6 weeks before, so that date is now approaching. We are a bit confused about 'holding fees', deposits and the length of time things take.
So, basically:
If for example on the 14th July we found somewhere we liked and paid the 'holding fee', when would the deposit be due (at the same time as the 1st months rent?) and when would we be moving in?
Sorry if I sound like a complete numpty!
