Singapore Chow Mein

I really love this dish, but have only just started making it from scratch, and although the flavour is good, it is not quite like the ones I have had from restaurants.
I use:
Ready to fry egg noodles
Bean sprouts
Sliced onions
Red and Green Peppers cut into fine slices
Peas (frozen ones)
Finely chopped Red Chillis
Salt, pepper, five spice, turmeric powder
Crushed garlic cloves
Grated ginger
Meat:
Pork fillet, chicken, prawns - marinated in sweet chilli sauce overnight, then cut into strips and put on skewers and grilled.
I fry onions, garlic, chillis, ginger, spice, then add the noodles, peppers and bean sprouts. I use a high heat, with about 1 tablespoon of oil, and move the ingredients around, coating them with the spices.
I then add the meat, and a little soy sauce and sweet chilli sauce - not too much though, because I do not want the dish to become too dry.
I think that hot chilli oil would be better than sweet chilli sauce, so perhaps someone else can tell me if they have cooked this before.
It is so quick and cheap to make, and it puts most takeaways in the shade.

try adding some goldfish curry paste - will make a very authentic tasting dish
you can get this really cheaply from ebay if you don't have a chinese supermarket near you - they have stocked it in tesco from time to time aswell.0 -
