freezing pack lunches

I have just made a load of ham sandwiches and put them in the freezer,
the ham packet said keep refridgerated :o

Id like to freeze more pack lunch items, any ideas would be nice :T

    Any meat would be fine to freeze - as long as it hasn't been previously frozen since cooking. You can add pickles etc, they will freeze OK. Cheese also freezes. Just don't add salad items as they don't freeze.
    If I was 7 ft 3, I'd be the right height for my weight :D

    So could i make up all the kids sandwiches for the week and freeze them??

    I hope so that would be great, but not sure if they will turn out ok.
    Do you defrost them the night before or just put them in in the morning and would they be defrosted by lunch time?

  • Take them out of the freezer in the morning and they will be just right by lunchtime.

    In my experience the best thing to freeze are; cheese, soft cheese mixed with tinned fish, meat of all kinds and pate. Mayo doesn't freeze well.

    You can freeze small cartons of juice to keep lunch fresh, some soft fruit (berries pear etc) freezes well and yogurt tubes like frubes and petit filous.

    I think that would be too risky as you're not supposed to refreeze meats that have been defrosted. But as has been mentioned, sandwiches with sliced meats can be frozen after making (once).
  • You shouldn't freeze raw meat that has been frozen before, or cooked meat that has been frozen in the cooked state before. But you can freeze raw meat, cook it then freeze it again. If that makes sense.

    So you could take raw chicken out of the freezer, thaw and cook it, then make sandwiches with it and freeze the sandwiches.

    I used to freeze sandwiches all the time. Add salad later though.

    I would take them out in the morning and they'd be just right by lunch and kept cool too!

  • when married to ex dh i used to freeze all his packed lunches as he would expect me to b e telepathic in knowing which days he would want one and would eat all biscs, crisps ect in the house and then complain about the lack of them in his packed lunches:mad: :mad:

    ham or cheese sandwiches/rolls freeze well biscuits r fine!! crisps yes i did say crisps ( not to keep them fresh but to stop him eating them all:mad: ) donuts! pork pies! drinks all packed in a carrier bag so he could just pick up a bag from the freezer on his way out!! it saved many row at 6 am i can tell u!:eek:

  • I have to go to lengths like that to stop packed lunch stuff being eaten before it's needed. I've just about cracked it now, but resent paying extra for the long-life desserts I've got hidden in the depths of the kitchen cupboards when I know (because they never stay in the fridge for long enough) that Lidl yoghurts would be just as acceptable. I don't think you can freeze these though, can you?

    Maybe if I got a big plastic tub for the fridge and disguised it to look like it contained liver and tripe casserole... :)
