"Green walnuts"

At this time of year, is the only use for pickling? Are they not edible unlike late Autumn foraged ones?

    Should add, will they not eventually become like shop bought walnuts if they are stored in a cool place?

    Lucky you to find a walnut tree! I think the green walnuts are only useful for pickling, but the French (and English) make liqueurs with them. We have to wait until September for the juicy, edible ones. The squirrels will nick them after that!

    This time of year, it's nigh on impossible get through the outer green bit and you end up having to peel it. That means that you lose most of it in the peelings and that's why most recipes are for the whole nut. If you don't wear gloves when handling the green walnut you get horrible yellow and brown fingers that will need scrubbing if you don't want to look like a very heavy smoker. :D

    Thanks Kay Peel - the links pictures are interesting. I will keep opening one up infrequently and see if they resemble miny walnuts.
