Stump Grinder Advice Please

I'm going to hire a stump grinder to remove tree stumps but have a couple of questions:

Do tree stumps need to be dead before using a stump grinder

How big a stump (height) will a stump grinder remove

no they dont need to be dead.
height??? as big as you can reasonably manage.
problem is the weight, not the height.

You want to cut the stump down as low as possible I would think 2 inches or less sticking up would be a good height.

I recently had a stump ground, using his smaller (still big!) machine he ground it well below ground level so in my case it can be paved over.
