Oh woops! forgot to report back!
Really tasty and yummy but perhaps a little to 'moist' so were difficult to turn over (baked in oven) perhaps one egg was too much to bind it all together. Have some still in freezer to use, but will adjust things the next time as will def. make again.

The recipe using a white sauce instead of potato is called 'croquettes' in Spain. They're delicious and there are numerous varieties.
You make a thick white sauce, with flour not cornflour. Allow it to go cold. Add to the mixture either fish (cooked), parsley etc, or ham & cheese, cooked veges. (Must be cold, and dry(ish).
Next, the important bit. Take a spoonful, dip in flour, then egg, then breadcrumbs - then repeat with egg and breadcrumbs again. Chill until nice and cold - or freeze.
Deep fry.

Can someone please give me a fish cake recipe, I'm afraid I don't have a clue about quantities for ingredients or how to cook them, but I am willing to have a go.

I find that the easiest way to deal with fall apart fishcakes is to freeze them & then cook from frozen - though I do fry them as I don't like them dry from the oven.0

I don't use an egg to bind mine and I don't add butter or milk to the mash either.I just use an equal portion of cooked fish to mash,a small finely chopped onion,some chopped herbs of your choice,(parsley is good so is thyme or chives) and sometimes a little sweet chilli sauce (just a few drops) mix it together in a bowl and then flour your hands and work surface and form the mix into patties,chill for a little while to firm them up then dip each one in egg and then breadcrumbs, after that chill again for about half our before cooking or freeze them spread out flat on a tray,once frozen you can bag them up without fear of them sticking together and cook straight from freezer0
