Fish Cake Recipe

I have just bought some smoked haddock; I have a piece of white fish in the frezer and intend to combine both to make some fish cakes. Now I have searched on the forums (and discovered interesting threads I had not seen before!)but not how to make successful fish cakes.
I can make breadcrumbs and have eggs, but would prefer not to use mashed potatoes to bind if poss. What about grated? and should I add anything else? Ideas please.

    I don't know about binding, as I always use mash, but I like to add chopped up gherkins, capers, boiled eggs and a pinch of cayenne.
  • Jane Grigson has a recipe where you use a thick white sauce instead of mashed potato - and I think do does the book, New English Kitchen, as recommended by Moggins

  • Crikey !! I guess it would have to be thick to make a manageable mixture; still I guess I could give it a go with a cheese sauce? Plan to have a go this afternoon and so will be able to let the mix cool (which may make it easier to manage.)
    This is all pat of my new meal planning!
  • Yes, I think you have to chill the mixture in the fridge to be able to form it.

    When I make fish cakes I never bother with a recipe! They always taste okay too. I normally mash the fish up a bit, use mashed potato up (warm it with a little bit of butter in a microwave) and stir it together with onion and mixed herbs. Dont always tend to put breadcrumbs on but I guess you could roll balls of the mixture in a bit of egg/milk and in the breadvcrumbs or just sprinkle them on top

    Fish cakes is quite an easy recipe to alter to your own tastes really!

    I've got a recipe for fish cakes that involves cooking jacket pots and fish in the oven. I find if I use boiled pots and poached fish, they turn out far too soft and fall apart when cooked.
  • After consideration (and talking to my dear friend who was horrified I was even considering making fishcakes without mashed potatoes!) I have got some potatoes boiling as I speak to use as mashed potatoes in the fish cakes.
    For some reason i thought I could avoid this and serve them WITH said pots, but realise now the alternatives more tricky; anyway I feel a complete failure having reached my 5th decade without making them :o although I do cook many things from scratch and even make my own pastry again after years of frozen.

  • Made the fish cakes the other day, dipped them in egg and rolled them in home- made breadcrumbs and froze them; about to put them in the oven for tonights meal, will report later
