Broccoli florets

Hi help needed. Newbie veg gardner!
My broccoli have just started producing florets and I go away on hols for 2 weeks tomorrow!
Will they turm to flowers while I'm a away and spoil? I read somewhere you could cut and freeze florets and they would then produce side florets. Is that what I should do?

I would cut and freeze. It won't be the same as eating it fresh but better than it all going to seed0
