Dried Tomatoes - cheating the sun with an oven

    hi just got a bread maker which i love and want to make the bread in my recipe book that calls for sun dried tommys ,i dont have any but i do have ordinary and tinned toms so is there a way to do it myself?dont have any sun either lol

    You can do it, using fresh tomatoes in a low oven.

    We have an older thread giving instructions, so I'll merge this one to it.

    Hoping I have a glut this year so I can try it!

    I've just spotted this thread.

    Be warned that there is a small but measurable risk of botulism with storing in oil. I found out more details from the Food Standards Agency, when this question came up on a veg growing forum I belong to.

    You'd be much safer freezing them.

    To make real good oven dried tomato's. Try this baby:

    Cut Plum toms in half or quarters.
    De-seed them and get rid of the juice (save it for stock)
    Put toms in a bowl and add salt (sea is best), dried or fresh Thyne and a good dollop of Virgin Olive oil. Mix using your hands so every tom gets some, let them stand fo 30 minutes. Tip the juices out (into the stock) and put toms on a baking tray
    Set the oven on its lowest temp put the tray of toms in and let the slow cook for at least 6 hours, best to go to bed, providing its night time.
    In the morning take them out of the oven and let the cool, salt check. Now put them back in a bowl and cover them with a good Olly Oil.
    Take the inner out and discard the skin: smear on bread that you have smeared garlic on and have a glass of some very dry and well chilled.
    Think pizza base, toast or whatever they are your little sweet babes.

    I'm so bored of cheese sandwiches for lunch!! I want to build up a store cupboard of roasted veg and sun blush tomatoes to use each day for making salads / couscous etc.

    I wanted to ask what's the best way to store oven-dried and also roasted veg? Should they be in the fridge under oil? If so which oil? How long would they last? (I am hoping for around 10 days, not mega long-term storage).
