I use the zest of the lime, and then the juice as well. For 350g of raspberries I usually use 1-2 limes (because we love to feel the zing in the jam).
I start off with raspberries and lime juice and zest until they soften a bit, add the sugar and then just cook until it is ready. Usually it is done in 15-20 min...Spring into Spring 2015 - 0.7/12lb0 -
the acidity in lemon juice works with sugar to gel the pectin in the fruit you use

Home-made jams dont really cost less to make yourself, but they do taste lovely.
I have found Aldi to do beautiful jams which are devine for 79p.

There are two types of sugar for jam making. Preserving sugar and Jam sugar. You need one or the other depending on which fruit you're using as one has more pectin and is better suited to the fruits with a lower pectin content. The information will be on the Silver Spoon website.0

I make raspberry and rhubarb jam. Raspberry on its own can be a bit pippy but mixing it with rhubarb gives it raspberry flavour and less pips.
The only sugar I use for jam making is ordinary granulated and I rarely have any problems. If I have any trouble getting a set I add some lemon juice.0
