    Ours has never gone mouldy either and ours is just kept in a sandwich bag so not airtight. Mind you a large block certainly doesn't last months in our house. Our kids have it on everything!

    I buy our parmesan from Lidl, always a nice big chunk of it and I keep mine in a freezer bag clipped with an airtight clip from Ikea in the fridge, it lasts a couple of months if not more and its never gone mouldy.

    I've had lidl and aldi parmazan and never had mouldy cheese either. I have even just left it in the plastic packet it was in loosely covered and still not had a problem. But our fridge is very cold perhaps your fridge is a bit too warm?

    If I get a few peices on offer I have used the freezer method, and agree it works well.

  • Oh and top tip I always keep my parmesan rinds too once Ive grated everything I can from it. I keep them in a bag in the fridge in readiness for minestrone soup making. Once Ive got a caulron of minestrone on the go I pop a parmesan rind in and it really does give the soup some extra flavour!

    I used to babysit for a lovely Italian couple who would drag a huge piece of parmesan back from their trip home. Guiseppe always kept it wrapped in greaseproof in a drawer and it lasted for ages - but they didnt have central heating in those days so I guess thats the culprit now.

    Hi salthepal,

    I alwasy kept it grated in the freezer, but having read advice from other Old Stylers I've started to freeze as a block and grate or shave it directly from the (frozen) block. It works wonderfully.
