Unlocking iPhone on iTunes

Apparently my phone can now be unlocked / opened to all networks. The guy at O2 advised me this is done via iTunes, and I didn't ask any further questions as I'm normally pretty savvy at things like that AND I had a small iTunes hacking matter to fix first...

However, now the time has come to do it and I cannot for the life of me work out how! I'm not after any dodgy unlatching or jailbreaking software, just the legit way of doing via iTunes as I have been told.

(MSE in that it will save me the cost of calling O2 again!!!)
