Unlocking iPhone on iTunes

Apparently my phone can now be unlocked / opened to all networks. The guy at O2 advised me this is done via iTunes, and I didn't ask any further questions as I'm normally pretty savvy at things like that AND I had a small iTunes hacking matter to fix first...
However, now the time has come to do it and I cannot for the life of me work out how! I'm not after any dodgy unlatching or jailbreaking software, just the legit way of doing via iTunes as I have been told.
(MSE in that it will save me the cost of calling O2 again!!!)

They were wrong. The instructions are on the o2 site above.
You need to use iTunes to unlock it though, but only once o2 and Apple have processed the unlock.0
