A proper knife steel as they don't damage knives, but you also need decent knives and a lesson in how to use one.0

Steels need to be of commercial standard to actually sharpen they are £200+ stones are the only way to sharpen properly but you need to oil and can be ball ache. http://www.magictools.co.uk/ the best i know at reasonable cost.0

Whetstone, which you can get for pennies.
