my work colleaugues and wife regularly use my back, :rotfl:
sorry I can't be of more use
The advice I give on here is based on my many years in the preservation industry. I choose to remain anonymous, I have no desire to get work from anyone. No one can give 100% accurate advice on a forum if I get it wrong you'll get a sincere apology and that's all:D

A proper knife steel as they don't damage knives, but you also need decent knives and a lesson in how to use one.

Steels need to be of commercial standard to actually sharpen they are £200+ stones are the only way to sharpen properly but you need to oil and can be ball ache. http://www.magictools.co.uk/ the best i know at reasonable cost.

Whetstone, which you can get for pennies. Has done my knifes (pocket and kitchen) for the last year or so without looking worn at all.
