I just got myself a magimix le glacier and am planning on making my first batch of ice cream this afternoon. I'd prefer not to make the full-on custard-based vanilla for my first attempt, and there are two recipes I'm interested in. One is a vanilla-yoghurt one and another is a raspberry yoghurt one. Has anyone tried these? Any tips?

I've recently inherited a gelato-chef - it's one of thos ice-cream makers that freezes as it churns rather than the "freeze the bowl type" IYSWIM.
To make frozen yogurt a GF in the states says:
To 1 cup of natural yogurt
Add 1cup of pureed fruit (strawberries, rasps etc) or 1 1/2 cups fruit juice (mango is lovely, but so is lychee)
Mix in 1/2 cup white sugar and stand for a few minutes till the sugar dissolves.
Stir in 1tbsp alcohol - vodka or white rum if you don't want to "taste it" - stops it freezing wayyy too hard.
Using the instructions on your machine churn until creamy smooth an dfrozen.
So far we've had frozen yogurt in the following:
Strawberry
Raspberry
Blueberry
Mango
Lychee
Peach (fresh liquidised peaches)
Banana
Watermelon
All seemed to work ok - frozen yogurt seem to freeze quicker than ice-cream recipes too. My machine takes 15 - 20 mins.
For vanilla frozen yogurt I think I would try the yogurt, sugar mix with some water and vanilla extract - or vanilla sugar if you have.
Maybe I'll give that a try this afternoon as the yogurt make has just finished and I hav eno immediate plans for it.

I can't speak for the recipes you quoted since the one I bought a few years back was an older model and cost me the grand price of 50p at a jumble sale!! It too had no instruction leaflet. However, scrimp and save all you can to buy the book, "Ices: the Definitive Guide" by Caroline Liddle and Robin Weir. It is THE best book on ice cream available. There are tons of recipes, and the lemon yoghurt ice is one of my favourites. At the back of the book is a full explanation in layman's terms of the chemistry of icecream making, which enables you to calculate the exact proportions of cream and sugar required to make any flavour ice of your choosing. There is also a history of ice creams in the front of the book, comprehensive advice on equipment and making ices without a machine, and lots of wonderful quotes, drawings, and photos scattered throughout the recipe pages. I know it's expensive but it is worth every penny, and was written by two people as confused about which recipes are the best as any of us. They have done a huge amount of research and the results from their recipes blow restaurant ice-creams right out of the water. We made a double quantity of Lemon Sorbet a couple of Christmasses back and the taste was so good and so strong you only needed a sip for it to explode in your mouth. Devillishly addictive and totally delicious, it remains unmatched in my experience. Buy the book. You won't regret it.0 -
