So how do I tell what are leeks and what are spring onions..?

Well, I'm certainly no expert on anything 'greenfingered', but, from my own current experience: we currently have leeks and spring onions growing, both were sown about the same time, and it seems to me that leeks are faster growers. Our springies are roughly 1 1/2 inch tall, whereas the leeks sown at same time are now about 4 inch tall...

In my experience leeks have coarser, darker, more strap-like leaves, while spring onions will have lighter, hollow leaves. If you wait a few more weeks it'll probably become more obvious.0
