Help With Parcel Monkey Couriers...Please

Hi was hoping someone could let me know were i stand legally with Parcel Monkey.
Saga is as follows and appologies for the length but i just need to be thorough.
I used Parcel Monkey to pick up a mountain bike from Birmingham on 30th April 2010 for next day delivery on the 1st May 2010. When the bike arrived it had been wrapped in accordance with Parcel Monkeys criteria i.e wheels removed and bubble wrapped. i also asked for the fella i was buying the bike from the turn the handle bars 90 degrees and remove the rear gears and wrap them individually and place them inside the bubble wrap in the main bike frame to avoid any damage. I also made a note on my order with Parcel Monkey in their box provided asking for additional information for the driver saying the pedals would still be fitted so care needed to be taken.
Anyway my bike arrived on Saturday the 1st May via City Link who must have been Parcel Monkeys cheapest option, I unwrapped the bike from the bubble wrap unfortunatley to fine a small part called the gear hanger which had been broken, how i have no idea as it was so well wrapped but you could see it was a fresh break and it was intact on the photo's of the bike the seller sent me. So luckily i had taken out the extra insurance with Parcel Monkey and i emailed them notifying them of the damage that day, They then got there claims department after several chasing emails to send me a list of the information they required to make a decision roughly 5 days after my initial notification of the damage. I then within hours sent off all the information they required listed below
1) provide a sales invoice, invoice with your details and yourconsignee's details showing full description and costing of the item
2)Please attach photos as evidence of the damage
3)Name of Person who first noticed the damage Phone no. of Person who first notified the damage
4) Date and time damage was noticed Date and time damage was reported
5)Give details of the Outer Packaging Describe Damage to Outer Packaging Describe Damage to the Goods.
I sent everything the needed then waited a few days then i contacted Parcel Monkey to see what was happening, again after several emails i got a response saying their claims department would reach a resolution by the 28th May (needless to say i was not best please at the time scale)
Any way 28th came and went and i recieved nothing so i contaced Parcel monkey again sevreal times before a response was given which i got today stating that their claims department now needs photo's of the packaging and tools used (they did'nt need this to give me a resolution date of the 28th of May so why need it now??) as for the packaging i have long since binned as it's been nearly 5 weeks since i unwrapped the bike
I'm wanting to respond but though i'd come on here to see if there is anything i can add as to where i stand legally that i can add to the email as i think they are hoping i'll just go away, which i will absolutley NOT
As i had bought the bike as a gift for my step father who had now returned home without the bike as it had to be kept at my house in case the claims people wanted to asses the damage, should they also now pay for it to be sent via courier to my step father house.
