What about Saag Paneer (Spinach and Cheese):
Fry finely sliced onion in oil
add bit of garlic and fry with some Indian spice mix (or maybe a curry powder), what ever you like really, add the spinach
Add Mascarpone Cheese if you have any and then some double cream
Cook till it's nice and gooey and then take off the heat and throw in some little chunks of cheddar cheese (they will melt slowly into the spinach mix)

I did a chicken stew the other day - think I got it on Jamie Oliver website - light stew with lots of green veg and lettuce put in for the last couple of mins - was really delicious0
