Lettuce and Spinach Glut?

Hi all :)

I have a MASSIVE glut of spinach and lettuce- two large pots of lettuce and a raised bed of spinach.

Does anyone have any ideas about what I can do with it all? I'm getting sick of salads!

    I put lots of spinach layered into my lasagnes. I sometimes also wilt lettuce down and use as a green with omelettes.

    I'm sure there's a recipe for lettuce soup knocking about somewhere...
    Also, a(slimming world) recipe that my family all really like is spinach mixed with quark and garlic, stuffed into chicken breasts and wrapped with parma ham/bacon. Not the cheapest recipe but very yummy.

    could you make up lots of colcannon with the spinach and freeze pots of it, make it quite spinachy? not sure how it would freeze though?

    spinach soup. yum yum yum! wilt with garlic and butter in a pan, then blitz with stock and stir in cream at the end. yum yum yum... shame I'm on no saturated fats, or that's what I'd like for dinner tonight!

    There's a nice soup you can make.....can't for the life of me think which book it's in, but you could try googling it? You use lettuces...even if they have bolted, they work in this soup, frozen peas (the most bog standard basics range is fine for this) and fresh mint. It's served hot (I just can't get into the idea of chilled soups) and it is really summery & also filling. It freezes well too. I made a big load of this when a whole lot of my lettuces bolted at once.

    With both of them, sweat with a bit of onion, and wilt. Blitz with a blender and minimal liquid. Then you can freeze and use as the basis of soup in future. Saves space if you add the stock as and when you want to use them for soup (or use spinach in lasagne etc. mixed with soft cheese).

    To slow down salad crops from all being ready at the same time; dig half up and replant. They will wilt for a few days and it puts them back a couple of weeks. Then, use the ones that are ready and the others will catch up soon.

    For using up spinach I'd be googling for "fiorentina" recipes. Mmmm: spinach, eggs and cheese are a heavenly combination.

    I also second the pea and lettuce soup suggestion, it's lovely

    Spinach!

    Blackeyed peas and spinach is one of my favourites.

    Cook enough black eyed beans for the number of peple you want to feed and keep warm if they have finshed before the main mix..

    Slice and onion of two into rounds and very slowly melt it in a little oil - you want the onion for go soft and sweet but barely colour.

    When they are soft add a little more oil, then masses of chopped spinach and turn the the spinach in the oil until it wilts but before it starts to go brown. Add the black eyed peas and mix the whole lot together.

    Yummy. Earthy peas, sweet onion and tart spinach.
