iTunes SHOULD prompt you before auto-syncing an iPod which hasn't been synced already with the iTunes library you have.
Do you still have the old laptop available to copy the library to the new?0 -
googler is correct but if you want to be extra careful, apparently opening Edit - Preferences, prevents autosyncing occuring - or so I have read on the mac forum.0

Can you back up your iTunes library and put it on the laptop? I've not tried before but would like to know too. I've seen there's an option to 'burn disc' and when you select it you can choose what type of disc to create.
Before you connect iPod, see if you can set iTunes up how you want it.IAAR/IAAMM/MFTMFAQ/IOA6BH0 -

To back up the files from your iPod onto your new computer hard drive you can use an iPod manager such as Sharepod.

If I were using the back up programs like Sharepod, I'd back up the library FROM the iPod BEFORE installing iTunes on the PC being used.
iTunes will only let you change the auto-sync option once the iPod is connected - and once you connect it, iTunes may well try and sync the empty library to it before you get a chance to change any options.
If iTunes isn't installed yet, backup the iPod before you install it. If it is installed already (with an empty library), I'd uninstall it, backup the iPod library, then install iTunes and load the backup library to iTunes.0
