Here's my mealplans for next week:

Monday - Spaghetti Bolognese (with enough for leftovers), extra veggies and garlic bread
    Tuesday - Not sure yet
    Wednesday - Bolognese Toasties
Thursday - Lamb Tikka Kebabs with Salad
Friday - Black Bean Chicken with Noodles
Saturday - Venison Pie with Mash and Veggies
    Sunday - Corned Beef Hash

Lunches will be sandwiches or leftovers from the previous night. In addition, I'll be having a baking day on Wednesday to fill the tin with biccies and another with cakes (possible some little carrot cakes, some flapjacks and a fruited loaf). In addition, I've a block of puff pastry in the freezer I want to use so I'll make some little herb empanadillas and also some with chorizo. :)

Lovely reading your mealplans. Take care, and have a good week.

It is actually very basic - for 4 people, you use 500 g turkey breast, 1 lime and 1 tin of coconut milk.

Cut the turkey breast into cubes and fry in a little oil until just browned. Add the grated zest of the lime and the coconut milk, bring to the boil, cover, then simmer on low for 15 minutes. During the last 5 minutes, take the lid off so the sauce reduces somewhat. Add salt & pepper, and some or all of the juice of the lime (taste until it is right).
Just before serving, top with some chopped coriander (optional).
Serve with white rice and steamed broccoli.

This is my first posting on here, though I have enjoyed lurking for a while, reading other's fantastic meal plans. Here goes with my first...

Sun: Nigella's ham in cola with jacket potatoes and homemade chutneys and salad from a friend's garden
Mon: Left-over gammon in a carbonara with peas or salad
Tues: Turkey escallopes (kids LOVE them!) with new potatoes and broccoli
Weds: HM breaded fish with HM oven chips and peas
Thurs: Butternut squash and sweet potato soup from the freezer with HM garlic bread
Fri: Spicy chermoula chicken with fruity couscous (Slimming World recipe)
Sat: Probably roast chicken if the Asda offer is still on, with garlic and rosemary roasted parsnips, potatoes and parsnips.
  • Not joined this thread so far, but a long-time lurker!

Sat - Brie & grape baguettes for lunch. Was supposed to be Turkey Caesar Salad but we all felt like a hot meal due to the rain hosing it down at cricket today! So we had an emergency meal of baked gammon, mash, cauli and broccoli (gammon joint from Tesco hot counter, was supposed to be for hearty soup tomorrow eve but will s-t-r-e-t-c-h it out with more veg!)

Sun - Pizza Express for lunch - yay! Tesco deals of course! Yellow pea and ham soup with left over baguette for tea if we're still hungry.

Mon - Turkey Caesar salad with HG salad
Tues - Prob fish pie and peas
Wed - Pasta bake with turkey in HM tomato sauce somehow
Thu - Omelettes or quiche and salad
Fri - Chicken stirfry and rice or noodles/or fajitas if I bother to make HM wraps

Really enjoying seeing what every one else here cooks - nice to have like-minded people around as many of my friends think I'm far too organised when I'm not really!

Here is my plan at the moment:

Tuesday - Lamb with couscous olives and tomato, pasta and sauce
Wednesday - Jerk chicken rice and peas
