Light meals

Due to recent health issues I've suffered a major loss in appetite. Even though it has started to return I find that I get full very quickly or can even feel a bit sick before getting anywhere near finishing a meal.
Therefore I'm looking for some light meal ideas. I'm looking for a wide variety of meals but particularly interested in any that are quick to prepare or lunches that can be prepared the night before.
And of course the cheaper and more OS the better!
All suggestions welcome.

I would tend to make up some bite size nibble - bit like party foods - that can be kept in the fridge & 'grazed' on as and when I had appetite. Also Morrisons do a pack of 10 calorie soups for 42p for 6 pack, the chicken one is lovely- think chicken noodle without the noodle lol. Of course as your appetite improves you could ADD some noodles.I THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0

I agree with Psykicpup that soup is a good way to get nutrition into you and it can be easily prepared the night before. The best thing to do is to eat what you fancy little and often to try to increase your appetite.

maybe stick to smaller but regular portions that you can graze at etc snack type food like veggies,crackers with a nutritional dip, cereal,jacket potatoes or toast with a topping ...0

Ive cooked for people with loss of apetite and one thing I ALWAYS do is to make small portions and serve them on a tea plate until the appetite improves! it puts people off to be faced with a large plate of food when they dont feel particularly hungry. a small plate of normal food attractively presented (think chef type presentation - you know - about 9 chips stacked in a tower, a pork chop can be taken off the bone and cut into squares then a little gravy or dressing with a little (very little) portion of pureed peas or swede makes a really nutritious meal. you can get it all on a tea plate and it looks nice enought to entice even a very ill person to eat it! you dont have to cook small portions - cook normal amounts and freeze the excess for another meal.
dont worry about eating the same portions as before - quality is more important! if the meals are well balanced and nutritious then eating a little of them is better for the body than great amounts of junk food!
some more ideas-
raw food is more nutritous so a salad is always acceptable. try to be adventerous and include things like bean sprouts, red or orange peppers(if you dont like them raw then they can be blanched in boiling water, I add sugar to the water and it really makes them taste nice and sweet), veg like cooked broad beans (skinned) or even runner beans. look in the supermarket for leaves you havent used before.
you dont have to have meat at every dinnertime - cheese and potato pie goes down well and you can make a small quantity in a medium saucepan divide it all up into ramekins - use one for your meal and freeze the rest. the ramekins work well with stews and casseroles too! you can serve them pub style with veg on the side on a bigger plate.
I used to make egg custards for my OHs uncle when he had throat cancer. its easy to eat and you can do them in ramekins too! I even had to do them when he was in hospital at the end of his life as it was the only thing he would eat. the nurses were ever so grateful - they felt awful when he refused everything they tried to give him.
presentation is key though - make it look nice, smell nice and is in portions not large enough to intimidate!

When I was going through chemo two years ago I had to be careful what I ate and for five months everything was very bland and light or I would be rather ill.I seemed to live on steamed fish and scrambled eggs .I was so pleased when I could return to having peppers and spices in my food again Its rotten when your appetite goes.I did for awhile have 'Ensure' on prescription from my Dr. as it was a complete meal with all the vitamins and essentials to keep me going when I didn't fancy much The strawberry one was lovely as long as it was ice cold for some reason.Hope you feel better soon0
