Carrot greens

If young carrots have had their foliage eaten by slugs etc. is it inevitable that the root will not grow? Also, if a more established plant has received the same fate, do you just dig it up and see if the root is large enough and edible?

I think it's a difficult one to answer, sometimes carrots will resprout leaves and sometimes not, if they are really small they are probably dead, if they are big enough to be eaten, then eat them.

Agree with Lotus on this one,as I always believe that the green above the soil is putting energy into what is below.
That said if you cut the top of a carrot and put it into a saucer of water is normally sprouts.
