Hi all,
I've spent half an hour searching and can't find the help I need - so I thought I'd ask directly.
We have guests arriving at 6.30 for a BBQ. We'd planned to serve bananas for pud with a toffee / butchscotch / caramel sauce. Alas, we have no cream.
Is there any way to make a sauce like this for icecream without cream or condensed milk?
I have butter and various kinds of dark sugar. Can I just melt the two together and serve it?

There is a slimming world "baked bananas" recipe that I made the other week and it was Very good and owuld be even better on the BBQ
MIx low fat spread/ marg or lets face it BUTTER!!
with cinnamon and brown sugar
To make a thick sticky sweet butter
Slice the banana- in its skin- length wise - and wack in some of the butter mix
Then wrap in foil and throw in the oven or on a BBQ/ Chiminea etc
In an oven at 200 I did them for 5 mins.
A gorgeous rich oozing quality of these, even with LF spread they tasted v rich and naughty. This with a blob of clotted or double cream or vanilla Ice cream would be GREAT
Slimming worlder can serve with a bit of low fat yoghurt!:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

Hi all,
Just an update. I found a tin of evaporated milk, and so fiddled with a recipe I found online to make the sauce. One of my guests commented that it tasted "just like Werthers Originals", and I happen to agree! :j
Recipe:
50g butter (I used slightly salted as that's all I had)
150g golden syrup
80g dark soft brown sugar
70g granulated sugar (recipe called for 150g light soft brown sugar, but I didn't have any, so I .. ummm... improvised!:o)
170ml evaporated milk (this is the figure in the recipe, I used two soup ladles from a 410g tin, which I reckoned to be approximate:p)
Melt the butter, sugar and syrup together in a deep pan over a low heat. Once it melts stop stirring and just swirl the pan. Allow to boil gently for 3-5 mins (I did 4, split the difference!), take off the heat. At this point I added a cap of vanilla extract, and then slowly dripped in the evap at arms length (it bubbles like crazy:eek:) whilst whisking to disperse the bubbles and prevent overspill.
This mix made enough for 6 greedy portions with some left over.
Remember boiling sugar is super hot and gives nasty burns.
