I like carrots, sweet potatoes, butternut squash, new potatoes, onions and red peppers. I toss them in some olive oil, crushed garlic, fresh sage and cajun spice and it's gorgeous

I tend to microwave my corn on the cob. I wash it, put a bit of butter on it and clingfilm the cobs (I normally do two together), then microwave then for about four minutes, sometimes longer. I made some chilli and lime butter the other night (butter, lime zest and juice and red chilli, all squished together) and put that on it, it was absolutely gorgeous with lots of fresh black pepper.0 -
my favourite is chunks of butternut squash mixed with chopped bacon, sage leaves,black pepper salt and olive oil.The sage leaves go all crispy, delicious!"Sometimes life sucks....but the alternative is unacceptable."0

I like courgette, mushroom, olives, tomatoes and pepper drizzled with olive oil and sprinkled with Italian herbs then roasted. I would serve this with some Italian flavoured cous cous (insanely easy to cook - add water (says how much on the packet), bring to the boil, cover and stand then reheat and add butter or olive oil. The Ainsley Harriot ones you just add boiling water so even easier!) or pasta and pesto.
For Christamas dinner I did roast carrots, swede, and leek with rosemary and thyme. That was obviously a side dish.0 -
My favourite combo is:
Sweet potato
Potato (cut slightly smaller than the sweet potato)
Red onion, cut into 'wedges' of eight pieces, skin still on.
Red capsicum, cut into chunks. I don't like yellow and I don't think green would work well.
Garlic cloves, broken apart but left to steam in their skins.
Courgettes/zuccinni.
I toss in just enough olive oil to coat the vegetables. About ten minutes before the end I slice up halloumi cheese into 0.5cm slices (1/4 inch) and lay over the top to get brown in the oven. Sometimes the grill helps.
You could also add pumpkin to this and other root vegetables. I don't like tomato as it goes soggy. Mmmm my mouth is watering. I love the mediterranean roasted veg with a nice cauliflower cheese. I roast mine in olive oil and balsamic vinegar and some italian seasoning. I made it a bit too often though and DH started to protest. He isn't a fan of cauliflower at the best of times.0
