Oven roasted veg

Options
I often look at all the preprepared oven roasted veg and think yummy. Any ideas what combinations I could use and what to eat it with - am a vegetarian by the way.

  • I love throwing a variety in the oven....try everything..my family favourites are:

    Sweet potatoes, new potatoes, carrots, parsnips and broccoli mmmm :)

    and put lots of black pepper on top yummy :)

    I rather like chunks of peppers, onions, mushrooms (whole mushrooms if small) and cherry tomatoes :smiley:

    Sounds gorgeous SS - I do cherry tomatoes, red onions, courgette and peppers, with a little bit of salt, pepper, olive oil & basil. Or I do just potatoes (par-boil first) with olive oil, garlic, rosemary, salt & pepper. Very yummy and not as unhealthy as proper roast potatoes.

    Hi jazzyjustlaw,

    My favourite combination of oven roasted veg are:

    Courgettes (thick slices)
    Button mushrooms
    Red onion (quartered)
    Pepper, I prefer yellow but any colour will do (sliced)
    Garlic (roughly chopped)
    Cherry tomatoes

    Drizzle with olive oil and put in the oven on a high temperature. When almost cooked add the cherry tomatoes and cook in the oven for another five to ten minutes.

    This is lovely served with cous cous.

  • I'm a veggie too (kind of - I cheat and eat fish :D ). My 2 combinations of oven roasted veg are :

    summery meditteranean - courgette, red peppers, mushrooms, red onion with olive oil and basil

    wintry - parsnip, beetroot, carrot and potato with olive oil and rosemary

    I love roasted veg, my fave combo is:

    Yellow and red peppers in quite big chunks
    an onion quartered and let fall to bits (or some shallots)
    tomatoes
    garlic

    I also add in sweet potato or carrot on occasion.

    With our roast chicken today, im roasting chunks of carrot, sweet potato and butternut squash in with our roasties, will be lovely!!!!!

    Never used it in anything else, but I also add a sliced fennel to over roasted veg - adds a different flavour all round.

    Don't believe the 'if you don't like aniseed you won' t like fennel' hype - as long as you keep it in a low proportion to other vegs, it's gorgeous!

    Roast Garlic - hmmmm yum yum......I roast the garlic and then use it in lots of dishes, as well as eating it on its own.

    Roast Onions - I roast whole onions

    All types of roast potaotes - you can do slightly sweet ones with sweet potoates and cinnamon.

    Roast butternut squash - in slices.

    What do eat it with - the summer ones like peppers/courgettes etc are fantastic with plain pasta, great in/on salad.

    I like sweet potato with pasta - it may just be me, not sure!

    Some, onion, garlic, courgette, sweet potato, butternut squash can be added into a tomato based sauce with pasta

    Some are yummy in risotto, i,e courgette, onions, garlic

    All winter veg makes great roast veggie soup - great way to use up leftovers!

    I eat a plate full with gravy!! (I'm also veggie!)
