    Tarragon cream chicken or Turkey - serves 2
    Sweat a finely sliced red onion in a tblsp olive oil. Add 2 turkey breasts and fry gently until sealed. Add 2 glasses of white wine and a handful of finely chopped tarragon. Simmer gently until wine has reduced by 3/4 (20 mins?). Add 1/2 pint of double cream and a generous pinch of salt and black pepper. Simmer until liquid is reduced by half. Serve with crusty bread and a greek salad. Yum yum.Not exactly diet food, but absolutely delicious.

  • Turkey & Chickpea Curry
    Chop onion
    Fry onion
    Chop two turkey breasts up
    Fry turkey breasts till cooked through
    Add tin of chickpeas & curry paste
    Stir in for a few minutes
    Add 400ml boiling water
    Allow to simmer until curry is the consistency you like it.

    Serves 2-4 depending on hunger!

    Thanks everyone - I now feel inspired to create a culinary masterpiece (or at least cook something edible!)

    I tend to cook mine for about 35-40mins at 180c, opening the foil for the final 10 minutes.. I've got a fan oven.

    bit late, but I have to mention turkey schnitzel.
    Chop the breasts into about 3 pieces, whack at them with a rolling pin or anything heavy until they are quite thin, dip them in flour, then in egg, then in breadcrumbs... then grill each side until the breadcrumbs start to turn golden.
    Yummy!

    My fave turkey recipe is Turkey Cassoulet (sp?).

    You dice the turkey, some onion, garlic, smoked bacon and fry up. Add some herbs, a chicken oxo, and a tin of chopped toms. Transfer to oven. When nearly ready, put garlic bread slices on top (they absorb some of the juice and taste gorgeous). Serve with rice.

    Mmm, makes me feel hungry but got WW weigh-in tonight :(

    dice an onion and cook in a little butter and oil, cut the turkey into chunks and brown off with the onion, add some white wine if you have some, crumble in a chicken stock cube and a little water add some garlic, cook for about 35 minutes, add some chopped mushrooms then mix a teaspoon of cornflour with natural yogurt and add to the pan, cook out until the sauce has thickened.

    While this is happening cook off some rice or pasta, serve with the turkey poured over it.......yummy..................

    The cornflour stops the yogurt splitting when you add it to the pan.........

    would u believe i just came on here to look up turkey breast recipes..!
    m-i-l sends us up a food parcel everyweek, usually includes a joint or some mince, this week it was turkey breasts and i know from trying them before that the kids arent keen...going to try the cassoulet and the fajitas..thanks all!

    Thought I would let you know what I cooked in the end - split them open and stuffed with mushrooms, cheese and herbs and then wrapped in bacon. They were yummy and not at all dry, which I always expect turkey to be.
    Now I have loads of recipes if I buy them again - you guys are great!
