Recipes for turkey breasts

Hi everyone
I've got some turkey breasts in the fridge that need eating up and I've been racking my brain for a decent recipe, but I just can't think of anything (probably not helped by the 3 glasses of wine last night!)
I've had a search and had a look at the recipe collections, but still nothing.
Please can someone help?

you can split them and make a pocket, then put some kind of stuffing in then wrap with bacon then cook, the recipe i have is to use haggis but daresay you wouldnt like that:D , you will soon get more ideas0

Wrapping them in bacon sounds good, but I don't know what I'd stuff them with. I actually quite like haggis
but I haven't got any hanging around!

You can stuff them with cheese or garlic butter. I have also made up a concoction of peeled, chopped tomatoes, a few finely chopped mushrooms and mixed herbs.
If you do anything that will melt (such as garlic butter), you need to wrap the portions individually in foil whilst they're cooking, as some of it leaks out. If you place the turkey on a piece of foil, then scrunch the foil up around the turkey, you can then unwrap the foil during the last 10 mins of cooking so that the turkey browns. (Hope that description makes sense!).
The sauce will then be in the bottom of foil, so you can pour it over the turkey when you serve it. Even if most of it has leaked out, it will have still flavoured the meat.
When I've done cheese or the tomato mixture, these haven't leaked out, but I still wrap them in foil as it holds them together.0 -
That sounds great. How long do you think they'd take to cook when they've been stuffed?0

How about turkey curry? I think this is even more delicious than chicken as it seems to soak up the flavous with it being a dry meat.0

I used mine yesterday - diced up small and added onion to pan with turkey - carrot and green pepper diced and a tin of plum value tomatoes, I also used a jar of chicken tonight chasseur which was in the storecupboard. Brown off turkey add other ingredients and bung in casserole in slow cooker/oven. I serve with noodles and it serves loads and I had some for us(2), some for son and his partner and some for the freezer(another 2 days worth for 2 of us) out of 2 lots of turkey. Therefore made 8 meals and tasted wonderful - the chicken tonight was on offer bogof some time ago tooSaving in my terramundi pot £2, £1 and 50p just for me! :j0

Mushroom and white wine sauce? Fry some onions until soft, then remove from pan. Cut the breasts into ~1in pieces. Fry until golden. Add the onions and some mushrooms, some white wine (maybe you've got some left over since last night?? Otherwise, cheapest plonk seems to work best, especially if sweet and sparkling), some seasoning (parsley, tarragon or lemon grass work well) and simmer gently for 20-30mins. Add some double cream to thicken, and serve with rice.0
