I have been given several ridge cucumbers, I want to pickle them, anyone got a recipe????? These are big, not the little gerkin type, I asume they will have to be cut into chunks?

Tootles Don't get excited I was going to ask the same thing.
I did make some lovely pickled cucumber a few years ago but lost the recipe
If my memory serves me right... i think that i sliced the ridge cucumbers after skinning them, put the cucumber in a dry salt brine for a day. Then diced a onion finely. Then after draining the sliced cucumber put it with the diced onion into steralised jars and covered it with white vinegar with dill weed. It was really delicious. But i'm not sure if that was really how i did it.... Lets hope that someone will know if that was the right way to pickle cucumber...20p savers club

Hi tootles and demented,
I googled and found a couple of recipes, here and here, or look on this thread for some suggestions by Old Stylers: Glut of Cucumbers!

I've done this a few times, it's very good
Bread and butter pickles
To fill 1 large jar (you can easily double the recipe)
2 small cucumbers such as ridge cucs
1 mild Spanish onion
1 oz salt
5 fl oz white wine vinegar
6 oz demerara sugar
1 tbsp mustard sedds
1 tsp coriander seeds
A big pinch of cayenne pepper
Slice cucumbers and onion and put in a bowl with the salt, mix well.
Put in a colander and leave to drain into a bowl overnight to draw out moisture.
Next day rinse well and dry on a tea towel.
Bring vinegar, sugar and spices to the boil and add the cucumber and onions.
Boil for 3 mins only so the veg don't go too soggy.
Pot in warm, dry jars with vinegar proof lids (ie coated in plastic).
This is a classic American pickle, fantastic in cold beef sandwiches .
