Ok
So last night I cooked up onion, carrot, new potatos and chicken thighs in a chicken stock so it made a sort of one pot stew.
Tonight I have some left over and was thinking of blending it down into a soup - adding a bit more chicken stock and few more veggies (ie carrots, green beans etc), bunging in a load of rice till that's cooked and some peas. Cook until the rice is done and some of the of the stock has dissolved - would this turn into a risotto type dish??? or just a horrible looking mess?
Also never made risotto before so i have no idea at all!

it will taste lovely whatever it looks like:D:heartpulsOnce a Flylady, always a Flylady:heartpuls0 -
There isn't a lot of liquid left in a risotto once the rice has cooked but there's absolutely nothing wrong with putting rice in a soup, especially chicken soup but I wouldn't blend it, I'd just leave it chunky. That was one of the dishes my mother served to her grandchildren with 100% success.
If you don't fancy soup you could add your extra veggies and then turn it into a pie0 -
Drain off most of the liquid.
Cook the rice in an appropriate amount of the liquid. Add any fresh veg during the cooking process.
Add the rest chopped up within about 5 minutes of it being cooked to warm through the rest.
You have a savoury rice dish.
Any leftover liquid treat as stock and turn that into a soup for tomorrow!
I could make it better myself at home. All I need is a small aubergine...
I moved to Liverpool for a better life.
And goodness, it's turned out to be better and busier!0
