A holiday for 2 people all inclusive for £1000?

Hi
We are a couple in our early 30's looking to take a holiday in mid june for 1 week. Ideally all inclusive at a beach resort, so we know what we are spending, if we eat out its our choice. Don't want to spend any more than £500-600 each.
Normally I just book flights to somewhere in the far east and find some good hotels but end up spending like £4k, however with the credit crunch decided we needed to save some money this year and be good. Been using Lastminute and tripadvisor but so many choices! Wondering if anyone had some personal recommendations.
I have been to the costa del sol as a teenager but was many years ago and would prefer somewhere new.
Somewhere like http://www.atlantis.com/ would be perfect! :-) but way outside our budget.
- Prefer large resort with plenty of pools.
- hoping mid June not too many kids
- Wondering what the big party places like Ibiza would be like - we never done anything like that.
- 4star or above
- beach with the hotel
- some sort of town with markets and shops to look around and local restaurants.
- trips out would be good also
Any suggestions? Pretty much open to worldwide.

Or what about something different like a med or red sea cruise? You could easily do that within budget0 -

Turkey is the obvious choice in my opinion.
Dates and a departure airport would help people help you.0 -
I'd try looking at morocco or turkey0

Prices in Greece are looking good - they will be after all the holiday trade they can get now.
