i would like to try and make my own pickle/chutney, and was wondering if anyone had a recipe they would like to share?
i dont like anything too chunky, but i do like something with a bit of a kick to it.

this is a wonderful swetcorn relish, i make this a lot
and you can use frozen value/smart price sweet corn for it
i gave this as one of the things in my christmas hampers last year
and everyone asked for more

I've been making chutney relish jams etc for years. Before ill health took over I used to read a pickle recipe book like others read Mills & Boon.
Sorry no specific recipes but my advice is to be inventive, get some recipe books from the library or do a google and try some you fancy.
Also go down a local allotment and have a chat see if you can fnd some Ideas (and cheap exccess).
At this time of year I'd start with something simple like mustard pickle. September is pickled onion time. In August when the tomato crop is in glut Tomato Relish can be good. Pear and orange chutney, is nice.
Try growing your own Japanise onions if you want to make a lot of chutney. they ripen in July/August (when main crop are most expensive) but do not keep so ideal for chutney etc.
Use proper full strenght vinigar and most definately not no brewed condiment ( lower does nt have the preservative qualities and non brewed is citric acid, the taste is not natural
The best thing about home made chutney etc is that you can alter to your own personal taste.
