I make up the meals in servings for 2 and freeze. It is easier for OH (& me) to remove, defrost and then heat through. I have several oblong or oval dishes as they fit the freezer better than round ones. If you are needing dishes don't forget the charity shops!
Some people freeze the elements of a dish eg. the sauces for lasagne and then assemble them when needed.0 -
I use two oblong dishes and bake them at the same time, and cut each into three. That way, we get two servings for that night, and an additional four to go into the freezer. I use plastic tubs - old takeaway tubs or I have some rectangular ones from Wilkos for about 4 for a quid and when they're cooled they just go straight into the freezer in individual portions, ready to take out whenever we need them.

I make huge batches but it depends what i`m cooking, if i make cottage pie i will make the meat mixture in the slow cooker and do the potatoes seperately, i use the plastic takeaway style cartons from the pound shop (7 for a pound) with lids and put meat in the bottom and potato on top and pop the lids on chill and freeze so that they are individual portions.
If i am making something that needs cooking in one dish eg lasagne i make an enormous one in my big earthenware dish and cut it to fit the same type of pound shop cartons so that this too is in the same cartons, if you prefer the foil type to reheat in the oven rather than the microwave then there are foil versions about. The containers differ depending on what method you choose to reheat the food.
By doing this i don`t have to buy lots of different sized dishes to cook food and end up with ones in the freezer that are needed for other things.

you can freeze in portions in the dish you cook in ,then once frozen remove from dish and put into a labelled bag or wrap in foil/cling film then when you cook to eat pop back in the dish to defrost/cook
Poundland good for dishes and bakeware
foil trays are easier but cost more in the long term

I do this too, and use the plastic trays [from the chinese takeaway meal] to freeze portions in. I believe you can also buy these in poundland - with 8 in a pack.

I cook in a big ovenware dish and whats left I pop in to foil trays from Poundland(pack of 10)I know its more expensive to use the foil trays but when I do freezer meals its my little treat to myself to have no messy oven dishes to wash up

I do this also, it means i don't have to either own a ton of cookware or have to buy foil trays etc.

When I am freezing stuff I make just a huge big batch, seperate into meal sized portions.
I line the dish that I want to cook it in with a plastic freezer/sandwich bag, pile it all in, and freeze. When it's frozen I just pull out the frozen block, which means I can re-use my dishes, and when I am ready, I pop it back in the dish to defrost and then cook!
This also takes up less precious freezer space.
